Growing up in a little town of Sibu in Malaysia (South East Asia), it was never a question of why we have to be convinced to eat our greens. My mother did not force those green or colorful vegetables on her five kids. We ate 2-3 servings of vegetables at every meal. There were no sweet deserts like ice-cream to entice us to eat our greens at the end. Thirty years later, on the other side of the world (Houston, USA) it was a perpetual struggle to get my two boys and a girl to consume enough greens. So these statements became a staple in the household, "because it is good for you," or "because I said so." Fruits are also a challenge because they all prefer the sweets. Why, why, and why! Perhaps our kids don't eat the greens and fruits because they are NOT fresh and laden with chemicals? Perhaps our vigorous body inherently knows poison when we eat them? My second born struggle with food allergies. Banana is even a repellent for him. Enter my passion - growing using natural and organic methods and bringing them to our community. They are baby version of your mustard greens, arugula, and sunflower, to name a few. They add a nice punch of flavor and loaded nutrients to your salad and vegetables.
